    Microwave quartered potatoes in a covered bowl with 2 tbsp water for 4 minutes to partially tenderize them.

    Heat 1 tbsp olive oil in a large heavy skillet over medium-high heat. Add sliced sausage rounds and sear for 3-4 minutes until browned. Remove to a plate.

    Add remaining oil, drained potatoes, peppers, and onions to the skillet. Season with Cajun seasoning and garlic powder.

    Cook for 10-12 minutes, stirring occasionally, until potatoes are golden and crispy and vegetables are tender.

    Return sausage to the skillet and toss everything together for 2 minutes to heat through.
